Mains

Serves 445 min

Ember-roasted chicken with lemon and fennel

The dish I make when friends arrive early and hungry. The lemons blister and go jammy, the fennel turns sweet, and the whole thing smells like summer.

You will need

  • 8 bone-in chicken thighs, skin on
  • 2 fennel bulbs, cut into wedges
  • 2 lemons, halved
  • 6 garlic cloves, lightly smashed
  • 3 tbsp good olive oil
  • 1 tbsp flaky sea salt
  • 1 tsp chili flakes
  • A handful of parsley, chopped

Method

  1. 1Light the fire or heat the oven to 220C. You want the coals glowing and grey, not flaming.
  2. 2Salt the chicken well on both sides and leave it at room temperature for 20 minutes.
  3. 3Toss the fennel, garlic and lemons in the oil and chili, then nestle the chicken on top, skin up.
  4. 4Roast for 35 minutes until the skin is deep gold. Squeeze over the charred lemons, scatter the parsley and bring the pan to the table.
